We are proud to be Mexico's first school dedicated to mezcal production.
IMDA trains producers and entrepreneurs from Mexico's main mezcal-producing regions, including Oaxaca, Jalisco and Michoacán, as well as students from the United States, Ecuador, Bolivia and Argentina.
Agave spirits production involves much more than operating a still. The program follows the entire production chain and the technical decisions that shape the final spirit.


Study each stage of agave spirits production and the technical principles behind the process. Live classes run from 6:00 to 8:00 PM, Mexico City time.

Ask questions during live sessions. If you cannot attend, each class is recorded so you can continue without losing the sequence.

Complete the program in Ejutla de Crespo, Oaxaca, working with local agave and traditional production methods from March 15–19, 2027.







Five days of production work in Ejutla de Crespo, Oaxaca. You will work with local agave and participate directly in the stages involved in producing an agave spirit.
The purpose of this week is to connect the technical principles studied during the previous 19 weeks with the physical reality of working with agave, fermentation vessels, traditional equipment and distillation.
This is a production week, not a tasting course or a distillery tour.

Learn the complete process from the beginning. No previous distilling experience required.

Already understand fermentation or distillation? Learn how the process changes when working specifically with agave.

Develop the technical foundation for an agave spirits project or future distillery.

Understand how raw material decisions affect processing, yield and the finished spirit.
